Q: Does anyone know if I buy two of these would one fit inside the other? I find it difficult to find stacking trays

Yes they fit one in another very snugly taking up the room of just one tray

Q: Product Details states the size to be 18 x 40 x 2 where as the Product Description says 40 x 27 x 2. Which one is it please?

I've just measured mine and it actually seems to be 27 x 39.5 x 2.5 (approximately). NB: The 2.5 dimension was measured along its length, so may be a little less in practice since it flares outwards, therefore 2cm overall depth may be closer.

Q: Can I use this to bake chicken and beef? Do I need parchment paper for baking chicken?

No paper needed and ok for small meats like chicken breasts, but you should consider deeper pans for larger joints due to spatter.
